I have a sweet tooth and there is one thing which always makes me go weak in the knees-quintessential chocolate brownie.However, many people like me suffer with an egg allergy but hey..that does not mean I give up on my brownie.I just find a way to make it without the egg.Many people want to avoid eggs in their diet or do not want to eat it during the festive season, that doesn’t mean you cannot binge on your cake.You can still have a perfect soft chocolate brownie at home,egg-less and moist. Eggless chocolate brownie is something which makes my day.Chocolate brownie with a scoop of ice-cream and hot chocolate sauce is as romantic as it gets.You will love it after a good candlelight dinner at home, over the weekend.Happiness is definitely a big slice of chocolate cake! Enjoy!

Ingredients
  1. 200 grams baking chocolate
  2. 1 cup heavy cream
  3. 1-1/2 tsp baking powder
  4. 1 tsp baking soda
  5. 1 cup maida or plain flour
  6. 1 cup atta or wholewheat flour
  7. 1-1/4 brown sugar
  8. 1/4 cup cocoa
  9. 1/2 cup butter
  10. ⅔ cup water
Instructions
  1. Cut the chocolate compound into small pieces and mix it with cream in a large pyrex bowl.
  2. Melt this in a microwave for 2 minutes after mixing well with a spatula after every 30 seconds, till it forms a homogenous mixture.
  3. Add sugar,cocoa to this along with few drops of vanilla essence.
  4. Add maida,atta,baking soda,baking powder in a sifter and sift well.
  5. Mix the dry ingredients with the cocoa mixture to form a cake mix.
  6. Melt butter in a pyrex bowl in a microwave.
  7. Add this to the cake mix, along with water so that it forms a gooey cake mix.
  8. Grease a large cake tin with 1 tbsp of butter so that the cake mix doesnt stick to the sides
  9. Pour the cake mix in the cake tin
  10. Pre-heat for 5 mins
  11. Bake the cake mix for 40 mins at 180 degrees celsius.
  12. Prick the middle of the cake with toothpick and if the mix still sticks to the toothpick,bake for 5-10 minutes more.( after checking with toothpick after 4-5 minutes)
  13. Let it rest for 10 minutes after baking is completed.
  14. Serve it with ice-cream and chocolate ganache/syrup.
Notes
  1. You can garnish the brownie with chopped nuts you like-walnuts,almonds,raisins and then bake.However you need to make sure the nuts do not get burnt.
  2. In case your oven is new the time required to preheat should be increased by 5 mins and baking might take little longer as well.Check with tooth pick.
