Makhaane ki kheer-Lotus seed pudding is an easy recipe which needs no soaking unlike rice pudding.It can be made in a jiffy whenever you want a quick treat.It can be made during any fast for bhog.Unlike sabudana or sama ke chawal,it is easy to digest .It has got origins from Indus valley civilization and is widely popular sweet in North India.

Makhaane ki kheer-Lotus seed pudding

Ingredients

  • 1,5 cup makhaane/lotus seeds
  • 1/2 cup sugar
  • 1/4 cup mixed dry fruits(almonds,walnuts)
  • 750 ml milk(reduce it to 500 ml)
  • 5-6 strands of saffron (soaked in 2 tbsp milk)
  • 2 tsp cardamom powder
  • 2 tbsp ghee

Instructions

  1. In a pan dry roast lotus seeds/makhane.
  2. Once they turn pink,add dry fruits to them.Mix well.
  3. Add ghee and stir well.
  4. Stir in milk,sugar,cardamom & saffron.
  5. Serve hot/cold.
