Sindhi community is one of the most adventurous communities in terms of flavor and experimenting with various ingredients.This could be due to their love for travel and migrating far and wide.Thoom ware chawar or Sindhi green garlic rice is delicately spiced and works great with almost all lentils,thus making it a great vegan option to plain rice.You can eat it with even yogurt dip or raita  if not avoiding dairy or with spicy fish curry if you are a non-vegetarian.I am a vegetarian and I even love vegan food, so I like it with a good bowl of curry or sai bhaji and some fried potatoes.

Yield: 2 serves

Thoom ware Chawar

Ingredients

  • 1 cup rice
  • 1/2 cup garlic chives chopped
  • 1 tsp. turmeric
  • 1 tbsp. oil
  • 1 tsp. cumin seeds
  • Salt as per taste
  • Few drops of lemon juice

Instructions

  1. Soak rice in water for atleast 30 minutes, wash with fresh water foe 3-4 times.
  2. Heat oil in pan, add cumin seeds , allow them to splutter
  3. Add green garlic and let it saute for 8-10 minutes until the garlic is cooked.
  4. Add turmeric,salt and rice.
  5. Add 2 cups of water and cook the rice in a covered vessel.
  6. Once cooked, add few drop of lemon juice,to prevent rice from sticking.
  7. Serve with any curry or raita.
