Baked fish with vegetables
Ingredients
- 1 whole fish scaled and cleaned
- Mix veggies
- Dutch carrots/Carrot sliced
- 3-4 regular tomatoes
- ½ cup cherry tomatoes
- ½ zucchini sliced
- 1 onion quartered
- ½ green pepper
- parsley/coriander leaves for garnish
- Sweet paprika 2 tbsp./Chilli powder(1 tbsp/adjust as per taste)
- 2 tbsp. garlic garlic paste
- 2-3 tbsp olive oil
- 2 tbsp. lemon juice
- 1 lemon sliced
- Salt and pepper for seasoning
Instructions
- Preheat the oven to 400 degrees F.
- Mix the ginger garlic paste with 2 tbsp. olive oil,1 tbsp. lemon juice salt and paprika.
- Make 3-4 diagonal slices about ½-inch deep on each side of the fish.
- Salt and apply oil on the fish generously.
- Season the inside of the fish with spice mix.
- Toss the vegetables in the remaining spice mix
- Line a sheet tray with aluminum foil and make a bed of vegetables except the tomatoes
- Arrange the fish on top with tomatoes.Season with salt and pepper
- Cover the dish with aluminum foil
- Place in the preheated oven and roast for 20-25 minutes.
- Remove the aluminum foil and bake until the fish is just cooked through, about 10-15 more minutes.
- Once cooked, allow it to rest for 5 minutes before serving.
- Garnish with parsley and lemon juice before serving.
