Brown rice with veggies

People are moving towards a holistic approach towards food.They want to enjoy it and still know what goes in it. Also want to keep their carbs and calorie counts low.

Brown rice (or “hulled” or “unmilled” rice) is whole grain rice. It has a mild, nutty flavour. Chewier and more nutritious than white rice.

Brown rice with veggies is a great dish to get the goodness of both carbohydrates from rice and vitamins from vegetables.


Brown rice and white rice have similar calories.However,key difference is in processing and nutritional content.We also lose dietary fiber and small amounts of fatty acids during this processing.

You can add veggies of your choice to a cup of brown rice,such as broccoli, beans etc.

You have a pilaf ready.Have it with yogurt or salsa.You can modify the seasonings in this recipe as per your choice.

Brown rice with veggies


  • 1 cup long grain brown rice
  • 1 cup mix veggies (carrots, peas)
  • 2-3 garlic cloves, sliced
  • 1 onion, chopped
  • 1 tbsp. oil
  • fresh coriander for garnish
  • salt, pepper and lemon juice to taste


  1. Wash brown with water 2-3 times.Soak 1 cup of brown rice in water for 1 hour.
  2. Pre-heat oven at 350F (170C).
  3. Heat oil in a pan, add onion, garlic.
  4. Sauté for 5 minutes.Add carrots, peas.
  5. Sauté for 5 minutes.Add salt and pepper.
  6. Transfer the veggies to a baking dish, along with rice and 2 cups of water.
  7. Cover the dish (with aluminum foil in case the dish does not have a lid).
  8. Bake in an oven for 1 hour or until rice is tender).
  9. Add lemon juice.Garnish with fresh coriander.

Note:Follow instructions on the pack for the amount of water required for brown rice to cook.
