Orange vegan cake

Orange vegan cake is a soft moist tangy cake.It reminds me of Orange,pineapple pastries bakeries back home.Small Iyengar bakeries in the by-lanes of southern India,cater to the small hunger pangs of hundreds on the way home.Be it kids coming back from school,sport practice or professionals all love a small bite of cake.They serve fresh baked sweets and savory daily and generally over by the end of the day.This orange vegan cake is our take on all those cake slices back home.Citrus mandarins and oranges are just the pick me up you need after a dull long tiring day at work.

Orange vegan cake


  • 3/4 cup organic raw sugar
  • 1 cup almond milk+water mixture
  • 1/3 cup oil
  • 1 tsp apple cider vinegar
  • 1 1/3 cup self raising flour
  • 1/4 tsp baking soda
  • 2 tbsp orange rind


  1. Mix flour with baking soda and sift well.
  2. Add sugar to almond milk mixture and mix well.
  3. Add apple cider vinegar,oil and rind to milk mixture.
  4. Mix well with a spatula.
  5. Combine all the wet and dry ingredients with a spatula.
  6. Preheat the oven for 220 degree centigrade.
  7. Rub a spoonful of oil on the baking tray in which you want to bake the cake.
  8. Bake for 40 minutes.
  9. Decorate with extra orange rind.
