Chicken Curry

Marinate chicken overnight for best results.You may also make the sauce and freeze in batches.Same curry can be used to make different curries

Ingredients

  • 500 grams chicken washed and cut

For Marination:

  • ¼ cup yogurt
  • 1 tbsp ginger
  • 1 tbsp garlic
  • 1 tbsp red chilly powder
  • salt as per taste

For tomato paste:

  • 2 medium tomatoes
  • 1 tbsp ginger
  • 1 tbsp garlic
  • 1 tbsp chopped green chillies

For Curry:

  • 1 medium onion
  • ½ cup tomato paste**
  • 1 tbsp red chilly powder
  • 1 tbsp coriander powder
  • ½ tsp turmeric powder
  • ½ tbsp garam masala
  • 1 tbsp kasuri methi
  • 1 tbsp vegetable stock powder optional
  • Salt as per taste
  • 2 cups water
  • ¼ cup oil
  • Coriander for garnish

Instructions

For Marination:

  • Mix curd,turmeric and ginger.
  • Make sure all chicken pieces are coated with the curd mixture.
  • Marinate overnight or for couple of hours.

For Curry:

  • Heat oil.Saute onions till brown.
  • Add tomato paste and stir.
  • Add red chilly powder,turmeric,coriander powder,garam masala and salt.
  • Mix well.Cook for 5 mins.
  • Add chicken pieces and mix well.Cook for 5 mins
  • Add water,vegetable stock powder.Cover and cook for 10 mins.
  • Now,add kasuri methi.
  • Garnish with coriander.
  • Serve hot with roti or rice.
