Mango salsa

Mango salsa is a refreshing salad for any meal.

Ingredients

  • 1 ripe mango peeled and diced
  • 1 cucumber sliced and diced
  • ½ onion diced
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • few leaves of mint chopped
  • salt and pepper to taste

Instructions

  • Mix mango, cucumber, onion in bowl with chopped mint leaves.
  • Refrigerate the salad mix for 30 minutes, this allows the flavors to mix well.
  • Toss the salad with rest of the ingredients.

Notes

Note: You may add jalapeno pepper,capsicums if you wish to make this spicy.
The ratio of fruits in the salad can be changed to suite your taste.
Add salt just before you serve.The ingredients will become soft if kept for long hours and lose their crunch.
