Vegan alcohol free Christmas cake

Easy Vegan christmas cake is a take on the traditional cake which is made with with eggs.This is an alcohol free christmas cake and a christmas cake without eggs.

Ingredients

  • 1 cup orange juice with rind or apricot juice
  • 1-¼ cup mixed fruits ¾ cup fruit peel,¼ cup raisins,¼ cup berries
  • ½ cup mixed dry fruits Pecans/cranberries or mixed crushed dryfruits (almonds,pistachio,cashew)
  • 2 tablespoon chia seed meal or flax seed meal
  • ¾ cup coconut sugar or raw sugar.You can reduce the sugar by ¼ cup if you like. Replace with almond milk if the batter is dry
  • ½ cup vegetable oil
  • 2 cup plain flour
  • 1.5 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • ¾ cup almond milk or oat milk (or cow's milk for vegetarian option)

Instructions

  • Take orange juice in a bowl,add the store bought mixed fruit mix with dried berries,raisins
  • Allow it to soak for 4 hours/overnight. If you are in a hurry, warm up the juice a bit and add the mixed fruits.Leave it to cool for 30 minutes.
  • Sift the baking soda and baking powder with plain flour,keep it aside
  • Add the chia seed/flax seed meal to the juice and fruit mix,Allow the chia seed meal to thicken up in the next 5-10 minutes
  • Add the coconut sugar or raw sugar and mix well until it dissolved
  • Add oil and mix well
  • Add almond milk to the mix and stir. Now, start adding the flour(sifted with baking soda and flour)
  • Keep mixing and adding the flour. Add more almond milk if required.
  • Preheat the oven for 10 mins at 160 degree C. Transfer the cake tin(or divide across 2 tins) lined with baking sheet.
  • Transfer the batter to a cake tin lined with baking sheet.
  • Garnish with whole nuts or chopped dry fruits on the cake batter.
  • Bake in a fan-forced oven at 160 degree C for 45-50 mins(if using single tin)/35-40 minutes if using 2 cake tins) or until a toothpick comes out clean.
  • Allow it to rest in the oven for further 5-10 minutes.
  • Take it out of the oven,allow it cool completely before cutting into slices.This cake is very soft and crumbly(simply melts in the mouth)

For air fryer

  • Pre heat the airfryer @160C for 5 minutes (using the bake option)
  • Cook at 160C for 25 minutes (using the bake option) or until the toothpick comes out clean. I have used a 8 inch cake tin,you can use a bread loaf tin as well

Notes

I have used the store bought mixed fruit pack, you may replace that with 'tutti fruity,raisins and few orange peel/lemon peel pieces'.
I have used 2 cake tins of 6inches or 1 cake tin of 8inch.
The one used in the picture above is cake tin of 8 inches, it was quite deep as well and took little more time (10 mins) to cook compared to being cooked in 2 separate cake tins of 6 inch each.
