Crunchy Quinoa salad

Protein rich salad which is vegan & gluten-free.A complete meal in itself.

  • 1 cup cooked quinoa
  • 1 to mato finely chopped tomatoes halved
  • 1 cucumber diced
  • ½ cup pomegranate seeds
  • ½ cup parsely/mint finely chopped

For dressing

  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt & pepper as per taste


For the dressing

  • Mix all ingredients with a spoon.Keep it aside.

For the salad

  • Cook the quinoa in some water for 8-10 minutes,drain excess water, keep it aside
  • Toss all ingredients with the dressing.
  • Serve fresh.


Store it in the fridge for few hours to retain freshness.
