Minestrone soup

Minestrone soup is a classic dish for a cold winter night.

Ingredients

  • 2 tbsp oil
  • 1 onion chopped
  • 2-3 cloves of garlic
  • 1 sweet potato chopped
  • 1 zucchini/carrot finely chopped
  • Few stalks of kale finely chopped
  • 1 can/400 gms of tomatoes
  • 1 can of butter beans
  • 1 cup mix raw pasta
  • 2-3 tbsp soup stock
  • water 2 litres
  • Salt as per taste
  • Bunch of basil leaves

Instructions

  • Heat oil,cook onion with garlic until pink.
  • Add tomatoes,cook for 5  minutes,add carrots.
  • Add remaining veggies and cook for 5 minutes.
  • Add water,soup stock,cover and cook for 15-20 minutes
  • Add canned beans,kale and cook for 10 minutes.
  • Add pasta and cook for 15 minutes/until the pasta is cooked.
  • Garnish with basil leaves and season with salt as per taste
  • Serve warm
