Air Fryer Amaranth Cutlet (Rajgira Tikki)

Crispy Amaranth Cutlet (Rajgira Tikki) made with sweet potato and air fried to golden brown perfection. A gluten-free, protein-rich snack simply yum!

Equipment

Ingredients

  • 1 cup boiled sweet potato mashed
  • 2 cup amaranth flour rajgira flour
  • 1 tablespoon grated ginger
  • ½ tablespoon dried mint leaves
  • green chillies optional, as per taste
  • Salt to taste
  • 1-2 tbsp oil for brushing

Instructions

  • In a large mixing bowl, combine mashed sweet potato, amaranth flour, ginger, green chillies, dried mint and salt. Mix into a soft dough.
  • 1 cup boiled sweet potato
  • Take a small portion of the dough and shape into round patties (cutlets/tikkis).
  • Place patties on a tray lined with parchment paper and freeze for 2-3 hours to firm up.
  • Preheat air fryer to 185°C (365°F) for 5 minutes.
  • Brush patties lightly with oil and arrange them in the air fryer basket.
  • 1-2 tablespoon oil
  • Air fry at 185°C (365°F) for 18–20 minutes, flipping halfway through. Brush or spray with oil once more for even golden brown cooking.
  • Serve hot with green chutney or yogurt dip.
