air fryer banana chia seed muffins recipe

Ingredients

  • 1 tbsp. powdered chia seeds 1 tablespoon soaked in ⅓ cup water for 15 minutes.
  • cup water refer notes
  • 2 medium bananas weighs 100gm after peeling
  • ¼ cup sunflower oil
  • ¼ cup raw sugar
  • 3 tablespoon vegan milk / hemp milk /oat milk
  • 1 cup self raising flour
  • 1 teaspoon vanilla extract
  • ½ teaspoon apple cider vinegar or white vinegar
  • 2 tablespoon walnuts crushed

Instructions

  • Preheat air fryer for 5 minutes at 150 deg C.Mix the chia seed with water.
  • Mash the bananas in a bowl,In a large bowl, add chia seed mix,banana and sugar.Add oil to the mix and Add milk to the mix with vanilla extract
  • Add self raising flour to the wet mixture.
    Add apple cider vinegar,Mix the ingredients slowly with a whisk
  • Pour the muffin batter in muffin cups. Garnish with chopped walnuts
  • Place in an air fryer basket. Air fry at 150 deg C / 300F for 15-17 mins. Check with toothpick once done or cook for few more mins until it comes clean.

In oven:

  • Bake at160 deg C| 320 deg F for 20-22 mins. Check with toothpick once done or cook for few more mins until it comes clean.

Notes

The chia seed mix can be replaced with eggs ( 1tbsp powdered chia seeds with ⅓ cup water can be replaced with 1 egg )
