muffin liners / silicon liners / paper muffin cups
Ingredients
1tbsp. powdered chia seeds 1 tablespoon soaked in ⅓ cup water for 15 minutes.
⅓cup waterrefer notes
2mediumbananas weighs 100gm after peeling
¼cupsunflower oil
¼cupraw sugar
3tablespoonvegan milk/ hemp milk /oat milk
1 cupself raising flour
1teaspoonvanilla extract
½teaspoonapple cider vinegaror white vinegar
2tablespoonwalnutscrushed
Instructions
Preheat air fryer for 5 minutes at 150 deg C.Mix the chia seed with water.
Mash the bananas in a bowl,In a large bowl, add chia seed mix,banana and sugar.Add oil to the mix and Add milk to the mix with vanilla extract
Add self raising flour to the wet mixture.Add apple cider vinegar,Mix the ingredients slowly with a whisk
Pour the muffin batter in muffin cups. Garnish with chopped walnuts
Place in an air fryer basket. Air fry at 150 deg C / 300F for 15-17 mins. Check with toothpick once done or cook for few more mins until it comes clean.
In oven:
Bake at160 deg C| 320 deg F for 20-22 mins. Check with toothpick once done or cook for few more mins until it comes clean.
Notes
The chia seed mix can be replaced with eggs ( 1tbsp powdered chia seeds with ⅓ cup water can be replaced with 1 egg )
