Equipment

  • Air fryer
  • steamer

Ingredients

  • 1 cup besan (gram flour)
  • 1 cup red lentil flour
  • ¾ cup water
  • 3 tablespoon oil for dough
  • ⅛ teaspoon baking soda
  • ¼ teaspoon turmeric powder
  • ½ teaspoon ajwain (carom seeds) optional
  • ½ tablespoon paprika or red chilli powder or to taste
  • ½ teaspoon amchur (dry mango powder)
  • salt to taste
  • oil additional, for brushing

Instructions

  • Mix besan and red lentil flour with baking soda, turmeric, ajwain, chilli, amchur and salt.
  • Combine water and 3 tablespoon oil separately, then stir into the dry mix and knead into a semi-hard dough that holds its shape.
  • Flatten portions of the dough into long, thin, evenly thick strips.
  • Arrange on a steamer plate without overlapping. Steam for 10 minutes once the steamer is producing steam.
  • Remove the fafda from the steamer and allow it to cool.
  • Preheat the air fryer to 150°C for 5 minutes. Brush the cooled, steamed strips lightly with additional oil. Arrange in the air-fryer basket in one layer without overlapping. Air fry at 150°C for 7–8 minutes and check the crispness; extend gradually if needed.
  • Cool slightly and serve.

Notes

The dough should be semi-hard, not runny or sticky.
No soaking or freezing. Steam the fresh strips without overlapping for 10 minutes, then air fry without overlapping at 150°C for 7–8 minutes. Crispiness depends on flour ratio, thickness and time. A different flour ratio may require different water or cooking time.
