Potatoes
boiled & mashed

1 small piece of ginger, to be pureed with coriander.

green chilli
optional,puree with coriander

Spinach
blanched and pureed, 2 cup spinach yields 1 cup blanched and pureed spinach.

Red lentil flour or chickpea flour
besan, optional only if the mixture is very soft
Spices

tablespoon
salt
or as per taste

for brushing

garam masala

halved lengthwise, for garnish
Instructions
Step 1: Blanch the Vegetables
Boil 2 cups of water.
Add spinach leaves, coriander, and peas.
Cook for 30 seconds only.
Drain and rinse with cold water.
Squeeze out excess moisture.
Finely chop or puree the blanched greens.
Step 2: Prepare the Mixture
Grate or mash the boiled potatoes.
In a large bowl, combine potatoes, green mixture, ginger paste, spices, and lentil flour.
Mix well until the mixture holds together.
Step 3: Shape and Freeze
Shape into small round patties.
Press one cashew on top of each kebab.
Lightly brush with oil.
Place on a tray and freeze for at least 4 hours (or overnight).
Step 4: Air Fry
Preheat air fryer to 185°C (365°F) for 5 minutes.
Place a perforated baking sheet in the basket.
Arrange frozen kebabs in a single layer.
Air fry at 185°C for 18–20 minutes.
Flip halfway and brush lightly with oil.
Cook until golden and crisp.
Serve hot with mint chutney or yogurt dip.
