  • pastry brush/ spoon
  • 1 strainer for oven
  • saucepan for oven

Ingredients

  • ½ broccoli Cut in florets
  • 1 cup cubed pumpkin cubed
  • ½ medium zucchini cubed
  • ½ green capsicums / green bell pepper cut in squares
  • ½ red capsicum/ red bell pepper cut in squares
  • ½ onion peeled and cubed

Spice

  • 2 tablespoon fresh parsely finely chopped
  • 2 tbsp. olive oil
  • Salt and black pepper to taste.

Instructions

How to make air fryer roasted vegetables?

  • Chop all vegetables while you preheat the air-fryer at 190 deg C/ 375 F for 5 mins.
  • Toss pumpkin and broccoli florets or any other hard vegetables in 1 tbsp. oil.
  • In preheated air-fryer, layer the broccoli and pumpkin in a single layer in the air fryer basket. Air fry at 190 deg C /375 F for 3-4 mins.
  • Toss the remaining vegetables with 1 tbsp. oil and add them to the airfryer basket, Air fry for 5 mins at 190 C /375 F.
  • Mix chopped parsley with salt& pepper, Add the seasoning to the veggies,toss to mix the seasoning evenly.
  • Then further air fry at 190C for 3-4 mins. Total cook time 11-13 minutes.

Notes

You can replace these vegetables with any vegetables of your choice, just cook the hard vegetables for few minutes first them add the remaining vegetables.
