Equipment

  • Air fryer
  • pastry brush
  • mandolin slicer / food processor

Ingredients

  • 3 Turkish bread/bread slices
  • 1 zucchini 6-7 slices
  • ½ butternut pumpkin 6-7 slices
  • ½ red bell pepper Red capsicum
  • 1 cup salad leaves rocket / argula / spinach
  • 1 avocado peeled,sliced
  • 2 tbsp. olive oil

Instructions

  • Cut 0.5 or 1 cm thick pumpkin, zucchini, bell pepper, avocado slices. Apply oil on pumpkin, zucchini and bell pepper using a pastry brush. Season with salt and pepper as per taste
  • Preheat air fryer at 180 C | 350 F for 5 mins. Spread the pumpkin slices in the air fryer tray.
    Air fry at 180 deg C | 350 degrees F for 8 mins. Keep it aside.
  • Similarly, spread the zucchini slices in the air fryer basket.
    Air fry for 5-6 mins at 180 C | 350 F. Keep it aside.
  • Spread the bell pepper slices in the air airfryer basket. Air fry for 5-6 mins at 180 C | 350 F. Keep it aside.
  • Slice the bread/sandwich bread. Toast bread for 3-4 mins @ 200 deg C| 390 F.
  • Toss some olive oil in salad leaves,Place the salad leaves between bread slices. Followed by grilled veggies. Serve immediately.
