Soak the soya nuggets in hot water (about 3–4 cups of water) for 15–20 minutes until soft. Squeeze out any excess water.

Grind the softened soya chunks with dried mint, green chillies, ginger, salt, and garam masala into a coarse mixture.
½ tablespoon garam masala powder, 1 tablespoon ginger, 1 tablespoon dried mint, 1 teaspoon red chilli powder, 1 tablespoon salt
Mix this with mashed potatoes
1 cup mashed potato
Shape the mixture into tikkis (or soya chunks cutlet patties).
Brush lightly with oil and freeze for a long time or overnight for better texture.

Preheat the air fryer to 180°C (356°F).
Place the tikkis in a single layer and air fry for 20–22 minutes, flipping halfway until golden brown and crispy.
Serve hot with green chutney
