- 3 cups grated zucchini squeezed to remove excess water
- 1½ cups boiled potatoes mashed or grated
- 1 tablespoon dried mint
- 1 tablespoon grated ginger
- 1 teaspoon paprika
- ½ teaspoon cumin powder
- Salt to taste
- ½ cup red lentil flour or chickpea flour
- Olive oil spray
Grate zucchini.
In a large bowl, combine zucchini, mashed potatoes, ginger, mint, and spices.
Add red lentil flour and mix well to form a thick batter.
Shape into round patties using an ice cream scoop or hands.
Arrange fritters in the air fryer basket in a single layer. Line with parchment paper if needed.
Spray lightly with olive oil.
Air fry at 180°C (356°F) for 20–25 minutes. Flip carefully after 20 minutes for best results.
Let them rest for 2–3 minutes before serving. They firm up as they cool.
