Ingredients

  • 3 cups grated zucchini squeezed to remove excess water
  • cups boiled potatoes mashed or grated
  • 1 tablespoon dried mint
  • 1 tablespoon grated ginger
  • 1 teaspoon paprika
  • ½ teaspoon cumin powder
  • Salt to taste
  • ½ cup red lentil flour or chickpea flour
  • Olive oil spray

Instructions

  • Grate zucchini.
  • In a large bowl, combine zucchini, mashed potatoes, ginger, mint, and spices.
  • Add red lentil flour and mix well to form a thick batter.
  • Shape into round patties using an ice cream scoop or hands.
  • Arrange fritters in the air fryer basket in a single layer. Line with parchment paper if needed.
  • Spray lightly with olive oil.
  • Air fry at 180°C (356°F) for 20–25 minutes. Flip carefully after 20 minutes for best results.
  • Let them rest for 2–3 minutes before serving. They firm up as they cool.
