Asparagus soup recipe

Equipment

  • Air fryer or oven
  • knife
  • Vitamix blender or any blender

Ingredients

  • 2 bunch asparagus 1 bunch has 8 asparagus spears and 200gm
  • 1 onion small
  • 3-4 garlic cloves sliced
  • 1 tbsp. olive oil
  • 1 tbsp. soup stock
  • 3 cups water
  • Salt and pepper as per taste.
  • lemon juice for garnish

Instructions

  • Preheat the air fryer at 170 C|340 F for 10 minutes. Air fry the asparagus for 7-8 mins in the airfryer or 10-12 minutes in the oven.
  • place the sliced onions and garlic cloves. Brush oil on them and air fry in a preheated air fryer for 12-14 mins at 170 C |340 F or 16-18 minutes in an oven.
  • Add all ingredients to a blender with 3 cups water
    Blend the above veggies along with soup stock in Vitamix or any high speed blender.

Notes

We have used an air fryer to cook the asparagus ,onion and garlic in batches. If you do this in an oven you can put all of them in a tray and do it one shot. Asparagus takes less time to cook than onions, however you can cook them in a single batch in the oven.
