½cupbeans cannellini beans and black beans, soaked for 4 hrs.
1tbsp.stock powderor
5-6cupswarm water
½cupcarrots
1cuppastaany pasta of your choice
1cupZucchinichopped
2cupspinachchopped
Salt and pepper as per taste or ¼ tsp
lemon juiceoptional
Instructions
Wash and soak beans in water for 4 hours or overnight.
Heat oil in a saucepan & add onion and garlic with little salt. Mix well with a spatula.
Once onions turn translucent, add tomatoes & salt let it cook.
Cook the tomatoes until they have softened
Add beans along with 2 cups of warm water warm water & stock powder.
Cover and cook for 20-25 mins or until they are soft. Add pasta ,carrots and remaining water, let it cook for 5-7 minutes or until the pasta has cooked
Add zucchini to it Add chopped spinach and let it cook for few minutes
Add lime/lemon juice before serving, Serve hot with toasted bread.
Notes
Note: If you are in a hurry, you may use canned beans instead. This helps you save the soaking time and also cooks fast. Quite helpful, when cooking on a weeknight.
