Eggless Banana Walnut Cake recipe | easy eggless banana cake recipe

Ingredients

  • 2 tablespoon powdered chia seeds Each tablespoon of chia seed meal need ⅓ cup water
  • cup water for soaking chia seed meal (15 mins)
  • 3 medium bananas, 3 medium banana yielding 200gms banana fruit
  • ½ cup oil Sunflower oil or any neutral tasting vegetable oil
  • ½ cup raw sugar
  • 6 tablespoon vegan milk or dairy milk if not vegan
  • 2 teaspoon vanilla extract
  • 1 teaspoon apple cider vinegar
  • 2 cup self raising flour
  • ¼ cup walnuts chopped

Instructions

In air fryer:

  • Mash the bananas in a bowl.
  • In a large bowl, add chia seed meal, banana and sugar.
  • Add oil to the mix.
  • Add milk to the mix with vanilla extract.
  • Add apple cider vinegar.
  • Now, add the dry ingredient ( self raising flour ) to the wet ingredients.
  • Mix the ingredients slowly with a whisk.Do not overmix
  • Pour the batter in cake tin. Place in an air fryer basket.
  • Preheat the airfryer at 160 deg C / 320F
  • Air fry at 160 deg C / 320F for 18-20 mins. Check with toothpick once done or cook for few more mins until it comes clean.
  • Let it rest for 10 minutes over a wire rack, before you serve.

In oven:

  • Preheat the oven for 5 mins at 180 deg C | 355 F.
  • Bake the dough for 30-35 mins at 180 degrees celsius in a preheated oven or until a toothpick comes out clean.
