Gajar Halwa recipe with Khoya | carrot pudding recipe

- 500 grams grated carrots
- ½ cup small beetroot boiled and grated (optional)
- 1.5 liter full fat milk
- ½ cup mawa optional
- ½ cup sugar or as per taste
- 4 tbsp. ghee or clarified butter
- ¼ cup dry fruits almonds,pistachio,cashews
- 1 teaspoon cardamom powder
Heat 2 tbsp. ghee in a pan,cook grated carrots for few minutes.
Add grated beetroot to the carrots
Add milk,cardamom and let it cook on slow/medium flame,let it come to a boil.
Once it starts boiling,let it cook on slow flame.
Continue to cook,allowing the milk to evaporate
As the milk is reduced to ⅓ of original quantity,add Sugar
Add mawa(milk solids) and let it cook,add chopped nuts now.
Once the milk has evaporated,add 2 tbsp. ghee and let is cook until the ghee starts to ooze out.
You may use some homemade mawa to add much richness to the halwa.
The beetroot and mawa are optional items, you may increase the amount of milk(use 1 liter more), if you do not want to use mawa but prefer those milk solids .
