  • 1 cup water
  • ¼ cup red onion finely chopped
  • 1 small green chilli finely chopped
  • 4-5 curry leaves chopped
  • 1 small piece ginger finely chopped

  • up to 1 tablespoon oil for brushing during air frying only

Instructions

  • Mix the ready mix and water into a thick, pipeable batter.
  • Add the chopped onion, green chilli, curry leaves, ginger and crushed peppercorns.
  • Pipe into rings on perforated parchment paper over a steaming tray.
  • Steam for 10 minutes without oil.
  • Preheat the air fryer to 170°C (338°F) for 5 minutes.
  • Transfer to the air fryer and lightly brush with oil.
  • Air fry at 170°C (338°F) for 12 minutes total, flipping twice within those 12 minutes and brushing once more with oil. Use up to 1 tablespoon oil across both brushings.
  • Remove when cooked through and serve.

Notes

Makes approximately 4–5 vadas depending on size. The mix-to-water ratio and timings were tested with MTR ready mix; other brands may need different water. Keep the batter thick and pipeable. Steam 10 minutes without oil, preheat the air fryer at 170°C (338°F) for 5 minutes, then air fry for 12 minutes, flipping twice. Use up to 1 tablespoon oil for brushing during air frying only. Use perforated parchment kept securely under the food and away from the heating element.
