Sattu Burfi in Air Fryer

Easy air fryer sattu barfi made with chana sattu, ghee, powdered sugar and cardamom. The sattu is roasted in the air fryer and the sugar is dissolved in hot water, so there is no need to make a string-consistency sugar syrup.

Equipment

  • Air-fryer-safe metal pan
  • Sieve

Ingredients

  • 3 cups chana sattu
  • ¾ cup ghee melted
  • 1 cup powdered sugar
  • ½ cup hot water
  • 1 teaspoon cardamom powder
  • 2 tablespoons sliced almonds for garnish

Instructions

  • Sift the chana sattu to remove lumps and transfer it to an air-fryer-safe metal pan.
  • Air fry the sattu at 170°C for 10 minutes.
  • Remove the pan, pour in the melted ghee and stir until the sattu is evenly coated.
  • Return the pan to the air fryer and cook at 170°C for another 20 minutes. Stir during roasting if required for even cooking.
  • While the sattu is finishing, combine the powdered sugar with ½ cup hot water and mix until the sugar has dissolved.
  • Remove the roasted sattu from the air fryer. Add cardamom powder and pour in the sugar mixture.
  • Mix thoroughly until everything combines into a thick, smooth mixture.
  • Grease a tray or plate with a little ghee and spread the mixture evenly.
  • Top with sliced almonds and press them gently into the surface.
  • Allow the barfi to cool and set completely, then cut into squares or diamonds.

Notes

Notes: Air fryer models vary, so use the stated timings as a guide and also watch the color and aroma of the sattu. The mixture should smell roasted and nutty without becoming excessively dark. Avoid adding extra water unless absolutely necessary, as too much liquid can make the barfi slower to set.
