red lentil flour
masoor dal flour

Instructions
Prepare the Dry Ingredients:
In a large bowl, sift together the red lentil flour, turmeric, red chili powder, and baking soda.
Prepare the Dough:
Add water, oil, and salt to a deep non-stick pan and heat.
Incorporate carom seeds and boil the mixture.
Allow it to cool a bit, then gently incorporate it into the dry ingredients.
First, use a spoon to mix, then knead to form a semi-soft dough.
Shaping the Gathiya:
Put the gathiya dough into a sev press or a gathiya machine.
Using a sev sancha, press the dough in a circular motion onto a baking sheet.
Air Frying:
Set your air fryer to 170°C and preheat for 5 minutes.
Arrange the gathiya strands in the basket, leaving some space between each.
Air Fry in air fryer 11–13 minutes until golden brown and crispy. The cooktime depends on how thick your gathiya is.
Cooling & Storage:
Take out the gathiya and put them on paper towels to drain.
Let them cool completely before storing in an airtight container for a very long shelf life.

The dough needs to be semi hard, not to hard (else you will not be able to use the sev press) and not too soft.
