Mash the boiled potatoes. Add about half the salt and spices and mix well.
Spread green chutney over one bread slice. Add an even layer of potato filling and cover with another slice.
Repeat with the remaining bread and cut each sandwich diagonally into two triangles.
Add besan, red lentil flour, remaining spices, salt and baking soda to a bowl.
Add 1 cup water and whisk into a smooth batter.
Preheat the air fryer to 185°C / 365°F for 5 minutes.
Dip each bread triangle into the batter, coating all sides. Allow excess batter to drip off.
Arrange the coated bread pakora in a single layer in the air fryer and lightly spray or brush with oil.
Air fry at 185°C / 365°F for 12–13 minutes, flipping halfway through and lightly oiling the other side.
Serve immediately with green chutney, tamarind chutney or ketchup.
