- 1 cucumber chopped
- 1 cup purple cabbage chopped in strips
- 1 cup lettuce chopped
- 1 cup cherry tomato chopped
- 1 cup bell pepper yellow & red capsicums chopped
Trail mix
- 1 tbsp. balsamic vinegar or as per your taste
- 2 tablespoon golden raisins
- 2 tablespoon dried cranberries or any dried berries
- 2 tbsp. pumpkin seeds
- 1 tbsp. sunflower seeds
- Salt and pepper as per taste / optional
Chop all the vegetables.
In a salad bowl, add all ingredients along with dressing and toss them together.
Optionally season them with salt and pepper. I avoid loading the salad with salt so that I can enjoy the flavor of the veggies
You may mix all dry ingredients with veggies and add vinegar just before serving.
You may add/remove any ingredients from this so that you get different flavor each time.
Instead of Balsamic vinegar, you can try apple cider vinegar ,rice wine vinegar or just plain lemon juice.
