Ingredients

  • 1 cup adzuki beans soaked in water for 3-4 hours/overnight
  • 2 tbsp. olive oil
  • 2 medium onions chopped
  • 1 piece ginger
  • 2 cloves garlic
  • 1.5 cup tomato paste or 4-5 medium tomatoes
  • 1 tbsp. paprika
  • ½ tbsp. soup stock powder or garam masala if you like it spicy
  • 4 cups water
  • 1 medium sweet potato 1 medium sized sweet potato weighing 200 grams.
  • 1 tablespoon lemon juice or as per taste
  • salt and pepper as per taste

Instructions

  • Heat oil in a pan and sauté onions, ginger, garlic, and a pinch of salt for 3-4 minutes.
  • Allow the tomato puree to cook for 8-10 minutes until it forms a paste.
  • After adding paprika, salt, and soup stock powder, mix well.
    Stir thoroughly once you’ve added the adzuki beans.
  • Put water in and let it boil. Cook on medium heat until the beans are completely cooked (minimum of 30 minutes).
    Simmer sweet potato pieces over low heat for 10 minutes until they turn tender
  • Customize the salt and pepper to suit your preferences. Turn off the heat, add lime juice. Serve hot with bread.
