Ingredients

Grilled corn

  • 2 full corn cobs

Brown rice

  • ½ cup brown rice

Black beans curry

  • 1 small onion
  • 1 medium tomato large
  • 1 can black beans
  • 1 clove garlic
  • 2 teaspoon curry powder
  • Salt as per taste

Pickled cabbage

  • 1 cup purple cabbage
  • ½ cup water
  • ¼ cup vinegar
  • 1 teaspoon salt
  • 1 tablespoon sugar

Serving suggestions

  • 5-6 cherry tomatoes
  • 1 Avocado sliced
  • 1 slice lemon
  • 2-3 tablespoon pomegranate seeds optional
  • 4-5 taco shells soft/hard - optional

Instructions

How to grill corn?

  • Grill corn on a stove until its charred from all sides. Please ensure your chimney is on and windows open. We do not want to trouble Fireman Sam!
  • Using a sharp heavy knife, remove the kernels (moving vertically from top to bottom).

How to make brown rice?

  • Soak brown rice for 15 mins.
  • Boil it with twice the water until it is soft or refer to packet instructions.

How to make black beans curry?

  • Heat oil in a pan. Add chopped onions, green chillies and salt to it. Let it sweat!
  • Add chopped tomatoes. Let it cook until tomatoes soften.
  • Add the curry powder.
  • Now, add of black beans and mix well.
  • Add 1 cup water and adjust salt accordingly. Let it come to a boil
  • Let it simmer for few minutes, it will thicken more as it cools down.

How to make quick pickled cabbage ?

  • To make quick pickled cabbage - heat ½ cup water with ¼ cup vinegar, add 1 teaspoon salt and 1 tbsp. sugar, add chopped purple cabbage to it. Keep it aside for 30 minutes and then serve.

Serving suggestion

  • Serve along with sliced avocadoes, purple cabbage pickle, brown rice, sliced tomatoes, lime and grilled corn in a bowl or taco shell.

Notes

You may use mexican seasoning in place of curry powder
