Ingredients

  • 1 tablespoon oil Olive oil or any vegetable oil
  • 1 onion medium
  • 2-3 garlic cloves
  • 1 tablespoon Garlic chives optional
  • 2 tomatoes large
  • ½ cup whole red lentils soaked in water or 1 can of red whole red lentils.
  • 3 cups water
  • 1 teaspoon paprika powder
  • 1 teaspoon curry powder
  • 1 small potato peeled and cubed
  • 1 small sweet potato peeled and cubed
  • Salt as per taste
  • 1 tablespoon lemon juice
  • 1 tablespoon green coriander leaves or any fresh herbs

For lentil and quinoa soup

  • ¼ cup quinoa replace ¼ cup lentils with ¼ cup quinoa, wash quinoa and use directly.

Instructions

  • Soak lentils in water(double the quantity) for 1 hour or more. Drain the water ,keep lentils aside.
  • Heat oil in a pan and sauté garlic chives, garlic cloves and onions for 3-4 minutes.
  • Add chopped tomatoes and cook until they soften, followed by soaked lentils along with 3 cups of water. Let it come to a boil.
  • Now, add paprika, salt and curry powder. Cover and cook on low flame
  • Cook until the lentils are cooked and tomatoes are soft
  • Add sweet potato & potato pieces and cook until they are soft(10 minutes)
  • Turn off the heat, add lime juice , Serve hot with bread.

For lentil and quinoa soup

  • Exactly same steps as above, just add washed quinoa with lentils. Quinoa does not need to be soaked.

Notes

If using canned lentils, use half of the water required and add drained lentils at the end along with potato and sweet potato.
Depending on your choice, you will adjust the amount of water and seasoning.The soup will thicken a bit once its allowed to cool.
