Ingredients

  • 2 tbsp. oil
  • 1 medium onion chopped
  • 2 garlic cloves crushed
  • ½ cup cannellini beans soaked for 4 hrs.
  • 1 cup carrots
  • 1 cup celery
  • 3 cups warm water or plain water for instant pot
  • 2 tsp. stock powder or
  • 1 teaspoon lime juice optional
  • Salt as per taste or ¼ tsp

  • Set the intant pot to saute,Heat oil in an instant pot & add onion and garlic with little salt. Mix well with a spatula
  • Once onions turn translucent, add carrots,celery & salt let it cook for few minutes
    Add white beans to the mix.
  • Add water & stock powder.Cover the pot with the instant pot lid in the seal position.
  • Turn the instant pot to pressure cook mode ,cook on high for 20 minutes, once the instant pot beeps, turn off the instant pot and allow a natural pressure release and open the instant pot.
    Add lemon juice and check for salt ,spice, serve hot/warm

Instructions for soup in pot

  • Wash and soak beans in water for 4 hours or overnight.
  • Heat oil in a saucepan & add onion and garlic with little salt.
  • Once onions turn translucent, add carrots & salt let it soften.
  • Add white beans along with warm water & stock powder.
  • Cover and cook for 20-25 mins or until they are soft.
  • Add 1 cup celery to it and let it simmer for 10 mins.
  • Add lime juice before serving, Serve hot with toasted bread.
