Air fryer Gulab Jamun recipe

classic gulab jamun is an evergreen Indian dessert which is made by air frying and is also gluten-free.

Ingredients

For gulab jamun without khoya (with sweet potato)

  • 1 cup sweet potato boiled and grated
  • 2 cup milk powder
  • 1 tablespoon hot ghee

For gulab jamun with khoya (with plain flour)

  • 1 cup mava soft khoya
  • cup paneer soft paneer, if you are using store bough paneer , steam it for few minutes and grate it.
  • cup plain flour maida
  • 2 tablespoon ghee hot ghee

For sugar syrup

  • 1.5 cup sugar
  • 2 cup water
  • 2-3 drops of lemon juice
  • pinch of saffron strands

Instructions

for sugar syrup

  • Bring all ingredients to a boil and cook until you get a light sticky syrup.
  • Keep it hot turning the heat for few minutes.It will thicken once it cools down.

for air fryer gulab jamun (without khoya, with sweet potato)

  • Boil/steam sweet potato,remove the skin and grate it.
  • Add milk powder to it with 1 tablespoon hot ghee.
  • Knead the dough, add more milk powder if required,keep it aside for 15 minutes.
  • Grease your hands with ghee,shape the mix into balls of any shape.
  • Transfer the tray into the freezer,allow to freeze for 2-3 hours.
  • Pre heat the air fryer at 150C for 10 minutes,place trimmed muffin cases ,greased with ghee/butter in the air fryer
  • Place the frozen gulab jamun balls in the air fryer.
  • Cook in the air fryer for 15 minutes, brushing with ghee twice in between.
  • Once they turn light brown,remove them slowly from muffin case, move them to the warm sugar syrup.
  • Let them stay in the syrup for few hours.
  • Serve chilled or at room tempreture.

for air fryer gulab jamun (with khoya, with plain flour)

  • Mix the soft mava with paneer and maida using a stand mixer/food processor for 10-15 mins.If you are mixing dough with hands it will take longer around 20-25 mins. Make a smooth dough.
  • Add hot ghee while kneading, if the mixture is not binding together, add 1-2 tablespoon of milk as well.
    Divide the dough into small portions.
  • Make a round ball , ensure the balls are smooth else it will crack during frying.
    Keep these dough ball aside for 30 minutes before cooking them.
  • Pre heat the air fryer at 160C for 5 minutes
    Place the gulab jamun balls in the air fryer on a parchment paper.
  • Cook in the air fryer for 12-13 minutes, brushing with ghee twice in between.
    Meanwhile, heat the water and sugar in a different saucepan to get the sugar syrup.
  • Once they turn light brown, remove them slowly from air fryr move them to the warm sugar syrup.Allow them to rest in warm syrup for few hours.
    Serve hot or cold.

Notes

If you place these on a silicon or baking sheet in the airfryer, them the shape will be less round.
