Nothing beats a gulab jamun when you are celebrating a special occasion. You can call it the most ordered dessert in an Indian restaurant. Most people love to make it at home by using gulab jamun mix. However, these are not gluten-free.Most of the recipes available require you to deep fry them in a heavy bottom wok. All these years, we have been deep frying the gulab jamun. No matter what the stuffing is ,it was also deep fried. This below recipe is for the air-fried version for the healthy vegan gulab jamun. Additionally the ingredients are just sweet potato and milk powder. Not only it comes out well, there are less chances of any failure except the shape of the gulab jamuns not being evenly round. It is actually a falahari gulab jamun.Super tasty, rich and yummy. You can also stuff it with nuts if you like. However, this version is a nut-free one. Yes so you can actually eat it during fasting. It is totally gluten-free. It does have milk powder and paneer in it, to give it that color.

Ingredients (for gluten free gulab jamun - without khoya)
- sweet potato boiled and grated
- milk powder
- hot ghee
- sugar
- water
- lemon juice
- saffron strands
Ingredients (for gulab jamun with khoya)
- Khoya/mawa
- Paneer
- Plain flour (maida)
- hot ghee
- sugar
- water
- lemon juice
- saffron strands
Instructions - air fryer gulab jamun ( without khoya)
Boil/steam sweet potato, remove the skin and grate it. Add milk powder to it with 1 tablespoon hot ghee.
Knead the gulab jamun dough, add more milk powder if required, keep it aside for 15 minutes.
Grease your hands with ghee,shape the mix into balls of any shape.
Transfer the tray into the freezer,allow to freeze for 2-3 hours.
Pre heat the air fryer at 150C for 10 minutes,place trimmed muffin cases ,greased with ghee/butter in the air fryer basket. Place the frozen gulab jamun balls in the air fryer.
Cook in the air fryer for 15 minutes, brushing with ghee twice in between.
Once they turn light brown,remove them slowly from muffin case, move them to the warm sugar syrup.Let them stay in the syrup for few hours.
Serve chilled or at room temperature.
Instructions - air fryer gulab jamun ( with khoya)
- Mix the soft mava with paneer and maida using a stand mixer/food processor for 10-15 mins.If you are mixing dough with hands it will take longer around 20-25 mins. Make a smooth dough.
- Add hot ghee while kneading, if the mixture is not binding together, add 1-2 tablespoon of milk as well.
- Divide the dough into small portions.
- Make a round ball , ensure the balls are smooth else it will crack during frying.
- Keep these dough ball aside for 30 minutes before cooking them.
- Pre heat the air fryer at 160C for 5 minutes
- Place the gulab jamun balls in the air fryer on a parchment paper.(I did not add parchment paper at start and realized that the base of gulab jamun getting over cooked)
- Cook in the air fryer for 12-13 minutes, brushing with ghee twice in between.
- Meanwhile, heat the water and sugar in a different saucepan to get the sugar syrup.
- Once they turn light brown, remove them slowly from air fryer move them to the warm sugar syrup. Allow them to rest in warm syrup for few hours.
- Serve hot or cold.
Storage
Store it in refrigerator if looking to use for next few days.Heat them up a little ,add few tablespoons of water if required.
FAQs
Difference between Gulab Jamun and Kala Jamun is not just in color.Other than the color, there is a difference in taste which is due to the addition of Paneer .I prefer fresh home made paneer that can be easily crumbled and added to the mix. While frying them ,they will get a dark brown color .The skin of the kala jaam is also thicker than Gulab jam.
Variations
- You can make gulab jamun with khoya.
- You can also make gulab jamun with maida but that is not gluten free.
- Some people also make gulab jamun with mix.Many mixes are available like GITS, MTR etc. However, I like to make it from scratch.
- Some people also make bread jamun these days.
- If you do not have saffron, you may add teaspoon of rose water and cardamom powder.

- 2 cup water
- 2-3 drops of lemon juice
- pinch of saffron strands

- Bring all ingredients to a boil and cook until you get a light sticky syrup.
- Keep it hot turning the heat for few minutes.It will thicken once it cools down.
