Ingredients

  • 2 cups raw peanuts with skin
  • ¼ cup red lentil flour
  • 1 teaspoon red chili powder or to taste
  • 1 teaspoon chaat masala
  • ¼ teaspoon turmeric powder optional
  • ½ teaspoon salt or to taste
  • 1 small pinch baking soda
  • 4 teaspoons oil divided
  • Water for soaking

Instructions

  • Cover the raw peanuts with water and leave them to soak for 15 minutes.
  • Pour the peanuts into a strainer. Drain thoroughly without drying their surface completely.
  • Place the damp peanuts in a mixing bowl. Add the red lentil flour, chili powder, chaat masala, turmeric, salt, and baking soda.
  • Add 3 teaspoons of oil and toss until the flour mixture coats the peanuts. Separate large clumps.
  • Preheat the air fryer to 170°C or 340°F for 5 minutes.
  • Arrange the coated peanuts loosely in the basket. Spray or drizzle with the remaining oil.
  • Air fry for 8 to 10 minutes. Shake the basket and separate the peanuts every 3 to 4 minutes.
  • Remove the peanuts once the coating looks dry and crisp. Cool completely before serving or storing.

Notes

Air fryer cooking times vary, so check the peanuts early. Do not overcrowd the basket. Cook in batches when necessary. The coating becomes crisper as the peanuts cool.
