Air fryer spinach tofu parcels

Make crispy, golden brown spinach tofu parcels with puff pastry. A healthy vegetarian snack perfect for weight-conscious foodies!

Equipment

Ingredients

  • 150 gm fresh spinach leaves
  • 150 gm firm tofu cubed or crumbled
  • 1 small onion finely chopped
  • 1- inch piece ginger grated
  • 2 cloves garlic minced
  • ½ teaspoon black salt
  • 1 tablespoon lemon juice
  • 2 puff pastry sheets
  • 1 teaspoon oil for cooking
  • Optional: green chilies or red chilli flakes to taste

Instructions

Prepare the filling:

  • Heat 1 teaspoon oil in a pan on medium heat.

  • Add onion, sauté until pink

  • Add ginger and garlic; cook until aromatic.

  • Add chopped spinach and cook until wilted.
    150 gm fresh spinach leaves
  • Add tofu, black salt, and mix gently.
    150 gm firm tofu, ½ teaspoon black salt
  • Turn off the heat. Stir in lemon juice and let the filling cool.
    1 tablespoon lemon juice

Assemble the Parcels:

  • Cut each puff pastry sheet into rectangles or squares. You can also make it as a triangle.
    2 puff pastry sheets
  • Spoon spinach-tofu filling into the center of each piece.
  • Fold and seal the edges to make a parcel. Use a fork to crimp for a decorative edge, optionally
  • Transfer the unbaked parcels for atleast 1 hour in the freezer

Air frying:

  • Preheat the air fryer to 190°C | 375°F for 5 mins.
  • Lightly brush or spray the puff pastry parcel with oil.
  • Air fry for 18–20 minutes, flipping halfway through, until golden brown.
