Equipment

  • Steamer/ Instant pot/ Pressure cooker for boiling potatoes
  • frying pan
  • Airfryer
  • potato masher

Ingredients

  • 2 Potatoes large, boiled
  • 5 Peppers / green capsicums
  • 2 tbsp. Oil
  • Salt as per taste

Spices (can be replaced with curry powder)

  • 1 tbsp. Red chilli powder or as per taste
  • 1 teaspoon Turmeric powder
  • 2 teaspoon Coriander powder
  • 1 tbsp. Cumin powder

Instructions

  • Boil or steam potatoes. Peel and mash them.
  • Heat oil in a pan.Add boiled potatoes and spices.
  • Mix well and mash them using a masher.
  • Remove the tops and seeds of all capsicums,brush/oil spray them
  • Add the stuffing inside the capsicum.
  • Preheat the air-fryer for 5 mins.
  • Cook at 180C|355F for 16-18 min after brushing oil on the skin.
  • Serve hot with roti and dal fry.

Notes

You can change the stuffing to include sweet potatoes.
I have seen recipes where beans and rice is also stuffed in them.
For oven , it takes 30% more time in comparison to air fryer. Hence cook these for 23-25 minutes in the oven at the same temperature as air fryer.
