Dal vada recipe | air fryer lentil fritter recipe

Dal vada is one of the best memory of train journey in India. This red lentil fritter is protein rich & stays as it is for hours.

Equipment

  • kadai/frying pan (traditional method)
  • Air fryer for low oil version
  • Grinder

Ingredients

  • 1 cup yellow lentil chana daal
  • 1 small onion chopped
  • 1 small piece of ginger
  • 2 tablespoon oil brushing
  • 1 Green chilli or red chilli powder
  • Salt as per taste

Tempering

  • 2 tablespoon Oil for tempering
  • 2 tablespoon soaked chana dal keep some aside from the lentils soaked for dal vada
  • 1 teaspoon mustard seeds
  • pinch asafoetida
  • Handful curry leaves chopped

Instructions

  • Soak lentils with 2 cups of water for 3-4 hours.Drain all the excess water.
  • In a food processor add lentils,onion , ginger,spices & salt
  • Process them into a fine mixture. Dont add any water,keep this aside

Tempering

  • Heat oil in pan,add asafoetida,mustard seeds and curry leaves
  • Add soaked chana dal, cook for few minutes, turn off the heat.

Make patties/vada

  • Add the tempering to the above mixture
  • Make small patties out of the above mixture.
  • They will not bind that easily,use soft hands. Place them on a baking sheet on a tray,brush them with oil
  • Freeze these for 3-4 hours or more.

Cooking in airfryer

  • Pre heat the air fryer for 5 minutes at 180C/355F.
  • Line all the vadas in an air fryer basket lined up with baking sheet.
  • Cook the vada 180C/355F for 10 mins, brush oil and then again cook again for 5 minutes. Flip, and then cook for a further 4-5 minutes
  • Serve hot with coconut chutney or tomato ketchup.

Do not add water to the dal ,else it will be watery.
