Equipment

  • Griddle & rolling pin
  • Grater
  • Peeler
  • Mixing bowl

Ingredients

  • 2 cups whole wheat flour or multigrain flour / millet flour
  • 1 cup bottle gourd /lauki /ghiya/opo squash grated
  • 2 teaspoon ginger minced
  • 1 teaspoon green chilies chopped
  • salt as per taste
  • Oil for cooking on griddle/tava

Instructions

  • Peel and grate bottle gourd/lauki coarsely in a bowl. Add ginger and chillies as per taste.
  • Add this to the flour in a large bowl.Knead it into a dough with very minimal water(only if required, the bottle gourd/lauki does release lot of water)
  • Take a portion of the dough and roll into a flatbread/paratha. On a pre-heated iron pan start cooking the rolled thepla on low flame.
  • Cook ghiya thepla with little oil on each side. Make equal sized dough balls and repeat for the remaining dough. Serve dudhi na thepla hot with chutney or pickle.

Notes

Note: You can use any gluten free flour such as makai (maize) flour / jowar(sorghum),don't use any water to knead and use a baking sheet to roll them .
