How do you make lauki thepla?
- Peel and grate bottle gourd/lauki coarsely in a bowl. Add ginger and chillies as per taste.
- Add this to the mix to the flour with some salt
- Knead it into a dough with very minimal water (only if required, the bottle gourd/lauki does release lot of water)
- Take a portion of the dough and roll into a flatbread/paratha.On a pre-heated iron pan start cooking on low heat.
- cook the paratha with little oil on each side.
- Fresh warm with a dollop of butter /ghee/ yogurt raita if vegetarian. Serve lauki paratha with mango chunda or green chutney if vegan.
Substitution
You can make a similar gluten free thepla recipe from zucchini too. Use any gluten free flour if you do not have maize at home. Zucchini theplas are great too, when long melon is not in the market.
Variation
- This is a gluten free pancake if you make it with only maize flour.
- Use ghee for cooking instead of oil if vegetarian.
- You can even add 1 teaspoon garam masala powder if you like your food tangy.
- You may increase or decrease the amount of green chilli as per your taste.

No, I taste a bit ( a small bit)) of lauki before preparing to check if its not bitter.If its bitter, its not considered safe to consume.
yes, we can peel and chop bottle gourd in pieces and freeze it to make a curry later. I would suggest eat a small piece from both ends to ensure it is not toxic before storing it in freezer. You may also buy frozen lauki from Indian or Asian store for curry.
