Easy One pot vegan curry pasta recipe

This vegan curry pasta recipe combines the best of both worlds - hearty pasta with bold and aromatic curry sauce.

Ingredients

  • 3 tablespoon oil
  • 1 tablespoon ginger chopped
  • 1 tbsp. garlic chopped
  • 1 medium onion diced
  • 2-3 medium tomatoes pureed
  • 1 large potato peeled,cubed
  • 1 cup pasta penne or macaroni or rigatoni
  • 4 cups water
  • ½ tablespoon curry powder
  • ½ tablespoon red paprika or red chilli powder
  • Salt as per taste

Garnish:

  • 2 tablespoon fresh coriander or cilantro,chopped

Instructions

  • Heat oil in a pan and  Add onion,ginger and garlic to it. Let it cook for few minutes.
  • Add fresh tomato puree when onion is light brown.
  • Add curry powder and red chilli powder. If you do not have curry powder, you may use a mix of turmeric powder, coriander powder and garam masala. Keep stirring until the spices are mixed well.
  • Add the potatoes,pasta and any veggies you like. Add water to the mix,cover and cook on low flame
  • Once the potatoes and pasta are cooked, turn off the heat.
  • Serve hot. Optionally sprinkle some crushed black pepper and a spoonful of lime juice if you like.

Notes

 Note: If you do not have curry powder, you may use a mix of turmeric powder, coriander powder and garam masala
