    If you like both pasta and curry, why not put them together and make a yummy dish? This vegan curry pasta is a great combination of Italian and Indian, with the texture of pasta and the boldness of red curry. With just a few items and simple steps, you can put together a delicious and satisfying meal for any special occasion.

    Equipment

    Ingredients

    1. Oil
    2. Ginger-garlic
    3. onion
    4. Tomato puree
    5. curry powder
    6. Red chilli powder / paprika
    7. Pasta (Macaroni or rigatoni or penne)
    8. Potato
    9. water
    10. Salt as per taste
    11. Cilantro /coriander for garnish optional

    How to make pasta curry?

    • Heat oil in a pan and add onion, freshly grated ginger and garlic to it. Let it cook for few minutes over medium heat.

    • Add fresh tomato puree when onion is light brown.

    • Add curry powder and red chilli powder.

    • If you do not have curry powder, you may use a mix of turmeric powder, coriander powder and garam masala. Keep stirring until the spices are mixed well.

    • Add the potatoes,pasta and any veggies you like

    • Add water to the mix,cover and cook on low flame

    • Once the potatoes and pasta are cooked, turn off the heat.

    Variations & Substitutions

    • To make the curry pasta sauce creamier, chuck in a few tablespoons of vegan cream cheese or cashew cream as it's cooking. Creamy curry pasta is a just fantastic! especially if you are down and out.
    • To spice up your red curry pasta, add some extra curry powder or a sprinkle of cayenne pepper.
    • Make it more filling by adding diced tofu or your favorite veggies like red bell pepper, green peppers, broccoli, or spinach.
    • Use gluten-free pasta if you need a gluten free option.

    You can enjoy this curry, with rice or roti. It is easy, tastes great ,although it has minimal ingredients. Easy when you are stuck with less ingredients at home too.

    You can also make this vegan one pot pasta dish in an instant pot while you unwind.

    Storage

    You can store this curry in an air tight jar in refrigerator for 1-2 days. You can also make a curry cream pasta sauce and freeze it separately by adding cashew cream or coconut milk to your curry paste. Add fresh al dente pasta of your choice and serve it fresh.
