Sindhi baingan recipe | baingan tawa fry recipe

Ingredients

large aubergine cut in round thick slices
2
mustard oil
/ vegetable oil for frying
Spices:
½
teaspoon
turmeric powder
2
tablespoon
coriander powder
2
teaspoon
red chilli powder
2
teaspoon
dried mango powder
or amchur
Salt as per taste
Instructions
Wash and cut a large aubergine or eggplant in thick round discs.
Make shallow incisions on each slice.
Heat mustard oil on a tawa or pan.
Place all the slices on the pan and let it cook evenly on both the sides until they turn crispy.
Keep these aside and sprinkle the spice powders on them. Serve warm.
Air fryer eggplants slices
Make incision on the eggplant slicers,brush them with oil
Preheat the airfryer for 5 minutes at 180C|355F, Place these in the airfryer and start cooking them.
Cook for 12-13 minutes,flip over once between.
Add the spice mix on top of cooked eggplant slices
Continue to cook for 4-5 minutes,serve warm. total cooktime of 16-17 minutes @180C|355F
