Sindhi baingan recipe | baingan tawa fry recipe

Equipment

  • cast iron pan / carbon steel pan

Ingredients

  • 2 large aubergine cut in round thick slices
  • 2 mustard oil / vegetable oil for frying

Spices:

  • ½ teaspoon turmeric powder
  • 2 tablespoon coriander powder
  • 2 teaspoon red chilli powder
  • 2 teaspoon dried mango powder or amchur
  • Salt as per taste

Instructions

  • Wash and cut a large aubergine or eggplant in thick round discs.
  • Make shallow incisions on each slice.
  • Heat mustard oil on a tawa or pan.
  • Place all the slices on the pan and let it cook evenly on both the sides until they turn crispy.
  • Keep these aside and sprinkle the spice powders on them. Serve warm.

Air fryer eggplants slices

  • Make incision on the eggplant slicers,brush them with oil
  • Preheat the airfryer for 5 minutes at 180C|355F, Place these in the airfryer and start cooking them.
  • Cook for 12-13 minutes,flip over once between.
  • Add the spice mix on top of cooked eggplant slices
  • Continue to cook for 4-5 minutes,serve warm. total cooktime of 16-17 minutes @180C|355F
