Sooji halwa with jaggery recipe

Semolina pudding with jaggery is a good way to make the pudding without added commercial sugar.Jaggery is also good in Iron content and helps avoid flu.

Ingredients

  • ¾ cup sooji/semolina
  • ½ cup ghee
  • ½ teaspoon cardamom powder
  • 1-¼ cup water warm water
  • 1 cup warm milk
  • ½ cup jaggery crushed so that there is no lumps , can be replaced with sugar
  • ½ cup mixed nuts chopped almonds,raisins etc

Instructions

  • Heat the milk and water in a seperate container and let it come to boil,keep it aside to be used in the recipe.
  • Heat pan and roast semolina in the pan until it becomes light brown.
  • Generally takes 10-15 mins.
  • Now add ghee and cardamom powder to it and let it cook.Add the nuts and raisins if you want to add them.
  • Add the warm water,milk mixture to the recipe
  • While pouring, keep your hand away from the pan to avoid getting scalded by steam.
  • Add crushed jaggery to this mix and switch off the gas.

Notes

You may replace jaggery with sugar if required
If you are using unprocessed jaggery, then add it to the mix and turn off the heat as soon as possible as it has the tendency to curdle the milk.
the water+milk ratio is 3 times the quantity of sooji/semolina.
