Vegetarian manchurian can be made with dry or in a gravy. Goes great with both fried rice and hakka noodles.

For manchurian
- ½ cup maida/plain flour/all purpose flour
- 3 tablespoon corn flour/tapioca flour
- 3 cup cabbage finely chopped / grated
- 1 tbsp. ginger chopped
- 1 tbsp. garlic chopped
- 1 teaspoon Chilly chopped
- Black pepper as per taste grounded
- Salt as per taste
For gravy manchurian recipe
- 2 tablespoon oil
- ¼ cup onions chopped
- ¼ cup green capsicum chopped
- ¼ cup spring onions chopped
- Salt and black pepper as per taste
- 1 tbsp. tomato sauce
- 1 tbsp. soy sauce
- 1 tbsp. hot -sweet chilli sauce
- 2 teaspoon corn flour/tapioca starch
- 1.5 cup water
For air fryer veg manchurian balls
In a bowl, mix ginger, garlic and chilly to grated cabbage. Add salt and pepper.
Add corn flour and plain flour and mix well.
Keep it aside for 5 mins. It will release water which will help you bind the balls.
Make round balls of equal size and place it in the air fryer basket.
Brush with oil and cook for 13-14 mins in an air-fryer 190 deg C|375F or 16-18 mins in a fan-forced oven @ 190 deg C|375F
Keep it aside and add to gravy once ready.
For the cabbage Manchurian gravy recipe:
Heat oil in a wok.
Add onions, capsicums and spring onion greens to it along with salt and pepper. Cook for 5 mins.
Now, add your sauces -soya, tomato and chilli. Mix well. Use red chilli sauce as per your preference to make it as spicy as you like.
Add corn flour/tapioca and water and mix well. Let it cook until you get a good deep brown color.
Now, add manchurian balls to the sauce. Cook until you get the consistency as per your choice.
Garnish with some sesame seeds. Serve with hakka noodles or fried rice.
Note: Cook the manchurian gravy for longer if you like a drier version of manchurian.
If you like a darker color, add a darker soy sauce.
