Ingredients

Vegan chocolate cake

  • 2 medium bananas Total weight of banana(without skin) 200gm
  • ½ cup raw sugar powdered
  • 2 tablespoon flax seeds meal in ½ cup water for 10 minutes
  • ½ cup oil any vegetable oil(rice bran,canola, that does not freeze)
  • ½ cup cocoa
  • 1 tablespoon instant coffee optional
  • ½ cup oat millk or any plant based milk
  • 1 cup plain flour
  • ½ cup oat flour
  • 1 tsp baking powder
  • ½ teaspoon baking soda

Chocolate tofu frosting

  • 400 gms firm tofu This firm tofu is not drained ,came in a box with brine.Also called lite firm tofu
  • ½ cup maple syrup
  • ½ cup cocoa powder unsweetened
  • ½ cup berries for garnishing

Instructions

How to make chocolate vegan cake

  • Mix the flax seed meal with water keep it aside.
  • Mash the overripe bananas with a fork or in a stand mixer.
  • Add powdered raw sugar to the the mixing bowl and mix well
  • Now add oil and flax seed meal to bananas, mix it well. Add the oat milk to the batter.
  • Add the coffee powder and cocoa powder to the mix.
  • Sift the flour with baking soda,baking powder and oat flour. Now add the flour to batter and mix it with a whisk or spatula (Do not over mix it)
  • Pour the batter in cake tins( 2 cake tins ,6 inch) and give it a tap to remove any air bubbles.
  • cook in a preheated(10 minutes) oven for 25 minutes at 170C / 340F or until the toothpick comes out clean
  • Once cooked, allow the cake to cool on a wire rack.

How to make chocolate tofu frosting

  • Warm up the maple syrup in bowl,add cocoa powder and mix with a whisk,keep it aside.
  • Take the tofu piece in a jar, start blending with a hand blender.
  • Add the cocoa and maple syrup mix to the tofu, use the blender to mix.
  • Keep the frosting in the fridge for 30 minutes atleast before using it.

Assemble the cake

  • Cut the tops off from the cake to make it even.
  • Spread some frosting on the first slice. Layer another slice on top, followed by frosting and layer another slice on top.
  • Spread the frosting on the cake evenly from all sides
  • Garnish with berries.

Notes

you may use chia seed meal with water instead of flax seeds.
