I love making muffins and cakes. My son adores cupcakes and is an avid baker too. We both have a sweet tooth and it is a way we bond as a family too. I am allergic to egg so we try to use different flours and eggless combinations. Vegan chocolate cake & muffins are one of our favorite cupcake varieties. We love garnishing it with different types of ganache. I love making the eggless gluten-free banana muffins too. They can also be eaten during vrat (Indian fasting).
These days we are experimenting with firm tofu. I have always wanted to try tofu in both savory and sweet preparations. Initially I didn't know how to use it as tofu or soy paneer is not very huge in Indian cuisine. However, now I am in love with air fryer tofu after eating at a Vietnamese restaurant. You may make a simple salt and pepper tofu or lemongrass one. A basic pho is great on cold winter weeknights with some bread. Whether it is chipotle tofu bowl or tofu manchurian it doesn't disappoint. Another favorite is tofu mayonnaise which works great with all kinds of vegan snacks like jackfruit sliders and wraps. We also wanted to use tofu in sweets and hence came up with this tofu chocolate cake recipe. Hope you will love it too.

Why this recipe works?
Most people think vegan cakes might not be so good. Vegan muffins & cake can also be perfectly soft too. Our experiments finally resulted in a recipe we could put on our site for all of you to try. First of the cake is full of chocolate what else do you need? Bonus, it is garnished with tofu frosting instead of traditional buttercream. Thus it is low in calories too.

Vegan chocolate cake
- bananas
- raw sugar powdered
- flax seeds meal + water
- any vegetable oil(rice bran or canola, that does not freeze)
- cocoa
- instant coffee optional
- oat milk or any plant based milk
- plain flour
- oat flour
- baking powder
- baking soda

Vegan chocolate cake recipe
Equipment

Ingredients
Vegan chocolate cake
- 2 medium bananas Total weight of banana(without skin) 200gm
- ½ cup raw sugar powdered
- 2 tablespoon flax seeds meal in ½ cup water for 10 minutes
- ½ cup oil any vegetable oil(rice bran,canola, that does not freeze)
- ½ cup cocoa
- 1 tablespoon instant coffee optional
- ½ cup oat millk or any plant based milk
- 1 cup plain flour
- ½ cup oat flour
- 1 tsp baking powder
- ½ teaspoon baking soda
Chocolate tofu frosting
- 400 gms firm tofu This firm tofu is not drained ,came in a box with brine.Also called lite firm tofu
- ½ cup maple syrup
- ½ cup cocoa powder unsweetened
- ½ cup berries for garnishing
Instructions
How to make chocolate vegan cake
- Mix the flax seed meal with water keep it aside.
- Mash the overripe bananas with a fork or in a stand mixer.
- Add powdered raw sugar to the the mixing bowl and mix well
- Now add oil and flax seed meal to bananas, mix it well. Add the oat milk to the batter.
- Add the coffee powder and cocoa powder to the mix.
- Sift the flour with baking soda,baking powder and oat flour. Now add the flour to batter and mix it with a whisk or spatula (Do not over mix it)
- Pour the batter in cake tins( 2 cake tins ,6 inch) and give it a tap to remove any air bubbles.
- cook in a preheated(10 minutes) oven for 25 minutes at 170C / 340F or until the toothpick comes out clean
- Once cooked, allow the cake to cool on a wire rack.
How to make chocolate tofu frosting
- Warm up the maple syrup in bowl,add cocoa powder and mix with a whisk,keep it aside.
- Take the tofu piece in a jar, start blending with a hand blender.
- Add the cocoa and maple syrup mix to the tofu, use the blender to mix.
- Keep the frosting in the fridge for 30 minutes atleast before using it.
Assemble the cake
- Cut the tops off from the cake to make it even.
- Spread some frosting on the first slice. Layer another slice on top, followed by frosting and layer another slice on top.
- Spread the frosting on the cake evenly from all sides
- Garnish with berries.

- Mix the flax seed meal with water keep it aside for 10 mins. Meanwhile, mash the ripe bananas with a fork or use a paddle attachment of a stand mixer.
2. Add powdered raw sugar to the the mixing bowl and mix well
3. Now add oil, oat milk and flax seed meal to bananas. Mix it well.
4. Add the cocoa powder and instant coffee powder to the batter. Mix it well.
5. Sift the flour with baking soda and oat meal. Now, add the flour and mix it with a whisk or spatula (Do not over mix it)
6. Pour the batter in cake tins and give it a tap to remove any air bubbles.
7. Cook in a preheated(10 minutes) oven for 25 minutes at 170C / 340F or until the toothpick comes out clean.
8. Once cooked, allow the chocolate cake to cool on a wire rack.

Substitutions & Variations
- You can also make a ganache with chocolate chips almond milk or with avocado. You can also use a chia seed meal instead of flax seed.
- Add teaspoon vanilla extract, orange zest or cocoa powder for a variation. You can use any nut milk if you do not like oats. You can make a vanilla cake or a carrot cake and do a chocolate frosting too.
Storage
Store this in an air-tight container & refrigerate. It lasts for 3-5 days.
Top tip
Grind flax seeds in bulk n store it in a jar at room temperature. Saves time when you wish to bake a cake in a hurry.
