- 2 cups soy granules or TVP
- 3 cups hot water
- 1 tbsp. olive oil
- 1 tablespoon ginger
- 1 teaspoon cumin seeds
- 1 large onion
- 2 medium tomatoes
- 1 tsp. curry powder
- 1 tsp. red paprika / cayenne pepper
- 2 tablespoon soy sauce
- 1 tbsp. lemon juice optional
- 1 teaspoon salt or as per taste
Soak 2 cups soy granules, in 3 cups hot water. Wait for 15 minutes and drain it using a sieve. Press the mix to drain excess water.Keep it aside.
Heat oil in a pan and add ginger and cumin seeds,
Add chopped onions awith little salt and let it cook for few minutes, add chopped tomatoes
Cook on medium heat, until tomatoes soften,Add curry powder, red paprika and mix well.
Optionally add soy sauce to the vegan mince mix, continue to cook for 8-10 minutes on low heat or until the the mixture turns little dry.
Garnish vegan mince with chopped cilantro leaves. Serve hot as a filling for a taco/tortilla.
