Soy mince is an easy recipe which can be eaten with roti or naan or eaten with taco & tortillas.

Equipment

Ingredients

  • 2 cups soy granules or TVP
  • 3 cups hot water
  • 1 tbsp. olive oil
  • 1 tablespoon ginger
  • 1 teaspoon cumin seeds
  • 1 large onion
  • 2 medium tomatoes
  • 1 tsp. curry powder
  • 1 tsp. red paprika / cayenne pepper
  • 2 tablespoon soy sauce
  • 1 tbsp. lemon juice optional
  • 1 teaspoon salt or as per taste

Instructions

  • Soak 2 cups soy granules, in 3 cups hot water. Wait for 15 minutes and drain it using a sieve. Press the mix to drain excess water.Keep it aside.
  • Heat oil in a pan and add ginger and cumin seeds,
  • Add chopped onions awith little salt and let it cook for few minutes, add chopped tomatoes
  • Cook on medium heat, until tomatoes soften,Add curry powder, red paprika and mix well.
  • Optionally add soy sauce to the vegan mince mix, continue to cook for 8-10 minutes on low heat or until the the mixture turns little dry.
  • Garnish vegan mince with chopped cilantro leaves. Serve hot as a filling for a taco/tortilla.
