Equipment

  • Air fryer
  • Food processor / Vitamix
  • instant pot / steamer / pressure cooker /saucepan for boiling potatoes

Ingredients

  • 2 tbsp. vegetable oil
  • 8 pastry sheets frozen

Filling

  • 1 tsp. mustard seeds
  • 1 tsp. cumin seeds
  • 1 piece ginger grated, small
  • 1 small onion
  • 2 medium potato boiled
  • ¼ teaspoon turmeric powder
  • ½ teaspoon red chilli powder or as per taste
  • ½ teaspoon amchur dry mango powder
  • salt as per taste

Instructions

For filling:

  • Make the filling as per your choice. Heat oil in a pan. Add mustard seeds, cumin seeds, ginger and onions .Cook onions until translucent.
  • Add boiled potatoes, peas along with turmeric powder, cumin powder and red chilli powder once onions are cooked .Let it cool.

For assembling samosa:

  • Take the pastry sheets from the freezer and separate them out.
  • Brush oil on pastry sheets.Place a spoonful of filling on each patti and fold it to make triangles. Follow the steps(as shown in the steps)
  • Repeat the process for all the sheets, place them aside in a tray and brush oil again on the samosa.

Air frying:

  • Preheat the air fryer for 5 mins at 185C/365F. Place all the samosa in the air fryer basket after brushing oil on it.(if not done above)
  • Cook for 18-20 minutes @185C/365F . Flip over and brush oil once during the cook.
  • Serve them hot along with your favorite dipping sauce like mint chutney or date chutney.

the pack has 25 sheets, I used only few of them(8) and considered 2 samosa per serving. They are not that big.
