Is there anything better than a good samosa for a pick-me-up? It may not be the healthiest of breakfast recipe, but certainly is one of the most popular ones. After all, everything is great when you balance it. Whether it is mini samosa with nuts and lentils or paneer samosa. I even keep frozen samosas for a quick snack or as a breakfast recipe occasionally. Traditional samosas are made with plain flour dough and have a delicious filling inside. Later we deep fry it. However, the below recipe is for an air fryer samosa. If you do not have time to knead the flour, you can expedite it by using samosa sheets. While Punjabi samosa recipe has a potato based filling while traditional onion samosa recipe is patti samosa recipe.

Air fryer patti samosa recipe | Patti samosa in air fryer
Equipment
- Air fryer
- Food processor / Vitamix
- instant pot / steamer / pressure cooker /saucepan for boiling potatoes
- pan
Ingredients
- 2 tbsp. vegetable oil
- 8 pastry sheets frozen
Filling
- 1 tsp. mustard seeds
- 1 tsp. cumin seeds
- 1 piece ginger grated, small
- 1 small onion
- 2 medium potato boiled
- ¼ teaspoon turmeric powder
- ½ teaspoon red chilli powder or as per taste
- ½ teaspoon amchur dry mango powder
- salt as per taste
Instructions
For filling:
- Make the filling as per your choice. Heat oil in a pan. Add mustard seeds, cumin seeds, ginger and onions .Cook onions until translucent.
- Add boiled potatoes, peas along with turmeric powder, cumin powder and red chilli powder once onions are cooked .Let it cool.
For assembling samosa:
- Take the pastry sheets from the freezer and separate them out.
- Brush oil on pastry sheets.Place a spoonful of filling on each patti and fold it to make triangles. Follow the steps(as shown in the steps)
- Repeat the process for all the sheets, place them aside in a tray and brush oil again on the samosa.
Air frying:
- Preheat the air fryer for 5 mins at 190C/375F. Place all the samosa in the air fryer basket after brushing oil on it.(if not done above)
- Cook for 17-18 minutes @190C/375F . Flip over and brush oil once during the cook.
- Serve them hot along with your favorite dipping sauce like mint chutney or date chutney.

How to make crispy patti samosa?
For filling
- Make the filling as per your choice. Heat oil in a pan. Add mustard seeds, cumin seeds, ginger and onions .Cook onions until translucent. You may add chopped green chili if you like it spicy.

Let the potato stuffing cool. Tip: You can store this filling in refrigerator for 1-2 days or freeze it for later.
For pastry:
Take the pastry sheets from the freezer and separate them out.
Brush oil on pastry sheets.Place a spoonful of filling on each patti and fold it to make triangles. Follow the below steps for samosa folding. While closing the samosa at the end(step 4), you can use oil/water to close it.
Repeat the process for all the sheets, place them aside in a tray and brush oil again on the samosa.
For air frying:
Preheat the air fryer for 5 mins at 190C/375F. Place all the samosa in the air fryer basket after brushing oil on it.(if not done above)
Cook for 17-18 minutes @190C/375F . Flip over and brush oil once during the cook.
Serve hot golden brown air fried samosas with tomato sauce , green chutney, date chutney or sweet tamarind chutney.
Hint: Remove bits from earlier cook for best results.Always preheat your air fryer before you cook.
Substitutions
You can also use chopped cabbage, green onions or shallots and carrots in the filling. You can use minced meat or chicken mince as filling to make a keema samosa if you are non-vegetarian. Make homemade samosa patti if you cannot find readymade samosa pattis in local market.
If you do not have air fryer, you may bake it in an oven. It might take 30% more time. You can also fry it in a frying pan on medium flame.
Variations
- Spicy - add chili pepper flakes while cooking to imbue heat into the dish, or ground black pepper. You may also add other spice powders like garam masala powder, coriander powder, ginger garlic paste along with jeera powder. You may also add dry mango powder / amchur or lemon juice.
- Deluxe - add spoonful of spicy paneer curry inside
- Kid friendly - Keep it plain and simple. Add peas, carrots and corn for a variation. You can also make onion filling along with shredded cabbage.
Storage
Store it in an airtight container in refrigerator. Good for 2-3 days.
You can freeze them in a tray lined with parchment paper and cover it with a cling film. If you happen to make more than you can eat, reheat leftover samosas in air fryer to get the best results.

Raw samosa is too cold for you to fry.
You can make it earlier for 6-8 hours. Also, freeze them for later date if required.
You can fry it again or heat it on a pan for 5 minutes. If you want to air fry it, preheat the air fryer for 2 minutes and air fry it for 2-3 minutes.
Travel trivia
You will find vendors in South Indian cities selling it on cycles everywhere on the street. Nowadays, a deep fried Chinese samosa is also popular which has cabbage or onion in it. It is served with fusion sauce.
